
Instant Egg And Bacon Ramen
Quick and easy instant egg and bacon Japanese style ramen
Ingredients
1 104g Packet Instant kang Shi Fu Noodles
3 Strips Streaky Bacon
2 Eggs
2 Stalks Spring Onion
!/2 Sheet Natural Sushi Seaweed
2 Table Spoons Soy Sauce
2 Garlic cloves, crushed
3 Slices Ginger
2 Teaspoons Oil (sunflower, olive, coconut)
Water As Needed
Instructions
prepare the eggs
- Bring a pot of water to a boil and carefully add in your eggs taking special care not to submerge them too quickly, they will pop open and leak
- Boil your eggs for exactly 6 minutes for a very gooey center, 8 minutes for a more stiff jelly like yolk
- After 6 minutes quickly remove your eggs from the boiling water and submerge them into an ice water bath, let sit for 5 minutes
- Peel the eggs and place into a bowl, leave in the refrigerator until ready to assemble ramen
Prepare the bacon
- Bring a pot of water to a boil, add in the ginger, crushed garlic cloves and soy sauce, once boiling add in your bacon
- Boil your bacon for 8-10 minutes or until no longer pink
- Strain the water and remove the garlic and ginger
- Place a pan on medium high heat and add a few drops of oil, fry your bacon until golden brown and crispy 2 minutes each side
- Place your bacon on a cutting board and chop into bite size pieces
Prepare the rest of your toppings
- Dice your scallions and seaweed into bite sized pieces (if you're using other toppings such as corn, mushrooms or fish cakes, prepare them too)
Preparing the noodles
- Cook your packet of noodles in water as directed on the packet
- Take care not to over cook your noodles, they'll absorb water the longer you cook them and can become mushy
Assemble your ramen
- Pour your noodles and the broth into a large bowl
- Remove your eggs from the fridge and cut in half or quarters, add them to your bowl of ramen
- Add your bacon pieces and any other toppings you prepared
- Enjoy!
Additional Notes
You can omit the bacon and use the same method using shiitake mushrooms for a vegetarian option
This recipe is super easy and very flexible, you can add any extra toppings you desire such as corn, kale, mushrooms, fish cakes, lime wedges or chilly for a spicy kick!
